日本のお米がおいしいことは世界的に有名です。それは気温・土壌・水分そして日光など日本の気候風土がおいしいお米の育つ条件に恵まれているばかりでなくお米を大切に育てる勤勉な生産農家のみなさんの努力によるものです。風味に富みしっとりした炊き立てのご飯はおかずなしでそのままでも食べられるほどおいしいものなのです。しかしながらお米は精米した直後から鮮度が落ち、そのおいしさや風味を失いやすいものです。その原因は酸化・湿気・乾燥そして害虫の発生など環境による劣化です。桐の米びつでの保存により、お米をそれらの悪条件から守り収穫したてのおいしさを保ちます。それはなぜでしょう?
 
Japanese rice is world-renowned for its delicious taste. This is not only thanks to Japan's weather conditions, including particularly high temperature, soil, moisture, and sunlight, all of which are favorable conditions for growing delicious rice but also thanks to the efforts of diligent farmers who take great care of their rice. Japanese cooked rice is flavorful, moist, and fresh and it can be eaten without side dishes. However, rice loses its freshness and flavor immediately after polishing. This is due to environmental factors such as oxidation, humidity, dryness, and pest infestation. Keeping in the KIRI rice bin protects the rice from these adverse conditions and preserves the freshly harvested flavor of the rice. Why is this so?

Point 1 桐の気密性

熟練の職人が作った桐たんすは引き出しを閉めたら別の引き出しが飛び出してきます。これは桐たんすの気密性の高さを表す現象です。空気が逃げ場を探して別の引き出しを押し出して抜けるからです。当然こうなるには高い技術が必要です。この気密性によって内部は外部と遮断され温度や湿度・紫外線から守りコーヒーの鮮度を保つのです。また桐は多孔質な木材です。多孔質とは内部に空気の層を含むことで、発砲スチロールと同じ原理で外部の悪条件をシャットアウトします。
 
When a drawer made with a Paulownia tree by a skilled craftsman is closed, another drawer will be popped out, which phenomenon is an indication of the airtightness of Kiri drawers. The reason why is because the air escapes from one drawer by pushing out another drawer. Naturally, this requires a high level of skill. This airtightness shields the inside from the outside, protecting it from temperature, humidity, and ultraviolet rays, and keeping the coffee fresh. Also, the Paulownia wood is porous, which means that it contains a layer of air inside, the same principle as Styrofoam, which shuts out outside bad conditions.

Point 2 桐の抗酸化作用

桐は経年変化によりしだいに茶色くなっていきます。これは桐の内部のタンニンが表面に染み出してくるからです。この成分は弱アルカリ性。緑茶と同じものです。お米のヌカに含まれる油脂類は酸化しやすく味や香りを失います。弱アルカリ性の桐に保存することによりおいしいお米を酸化から守ります。
 
Kiri gradually turns brown with age. This is due to the tannin inside of the Kiri seeping through to the surface. This ingredient is slightly alkaline. It is the same as green tea. Oils and fats contained in rice bran can easily oxidize and lose their flavor and aroma. Storing in a Kiri rice bin which is slightly alkaline, protects the delicious rice from oxidation.

Point 3 本物の桐「国産桐」

このように桐には他の素材にはない特徴があります。ただしこれはその桐が本物かどうか。これが条件です。現在日本国内で流通する桐のほとんどが海外からの輸入材です。そしてその多くは防虫剤や漂白剤などの薬剤が使用されていることが多く、これでは桐自体が酸化してその機能が果たせません。当店では輸入材は一切使用せず本物の「国産桐」だけを取扱い続けております。
 
Kiri has characteristics not found in other materials. However, this is only possible if the Kiri is genuine because most of the Kiri currently in circulation in Japan is imported from overseas. Many of them are treated with chemicals such as mothballs and bleach, which oxidize the Kiri itself and prevent it from fulfilling its function. We do not use any imported materials, use only genuine "domestic Kiri.

Point 4 構造

塗装には柿渋を使用。これにより抗酸化作用と強度が増しました。また落しぶたで二重に外部を遮断します。桐箱は細菌の増加も防ぎます。細菌(乳酸菌やナットウ菌など)の増加は変色やアンモニア臭の原因となります。下のグラフはお米をビニール袋と桐箱で保存したものの一か月間の細菌数の変化です。ビニール袋に入れたお米は細菌が大幅に増加し桐箱の米は逆に減少しています。
 
Persimmon tannin is used for the coating. That gives it an anti-oxidant effect and makes it stronger. The box is also protected from the outside by a drop lid. The Kiri box also prevents the growth of bacteria. Increasing bacteria (such as lactic acid bacteria and natto bacteria) can cause discoloration and ammonia odor. The graph below shows the change in bacteria counts of rice stored in plastic bags and Kiri boxes over one month. While the rice in the Kiri box shows a decrease, the rice in the plastic bag shows a significant increase in bacteria.

使用方法
① 最初にお使いになる時には乾いたフキンでよく拭いてからお使いください。
② 水洗いはしないでください。
③ 中身が入った状態で激しく動かすとこぼれる可能性があるのでおやめください。
④ お米を入れ替えるときは中に残ったお米のヌカをしっかりと取り除いてください。

How to use?

尚この商品は芝浦工業大学 デザイン工学部の学生諸君とのコラボレーションにより実現しました。日本の伝統工芸と若い感性のマッチングです。
Kiri Project
 
Japanese people have used Kiri in their daily lives since ancient times. Its lightness, softness, and above all, the Kiri with beautiful wood grain has been utilized to store precious things, such as fine furnishings, clothing, and books. As time goes by, Japanese people's lifestyles change. Therefore, we wanted to create something useful things for today's lifestyle with Kiri. This is a reason why the coffee canister "KIRI CUBE" was commercialized.
This product was a collaboration with students of the Design Engineering Department of Shibaura Institute of Technology. It is a match between Japanese traditional crafts and young sensibilities.
